Brett started in kitchens at the age of thirteen, as a dishwasher. At young age food was not the focus, but Brett was happily exposed to hearty and healthy home cooked meals by his parents. For Brett it was all about the atmosphere, the “vibes” of a kitchen. As a kid he was given important jobs, and people relied on him to do them well… it made Brett feel adult and proud! From that point on kitchens were always where he was most comfortable.Brett’s love for food and cooking grew as he attended Niagara College, where a hunger developed for great technique and products. This hunger pushed Brett to explore and work in restaurants ranging from fine dining two Michelin star Gidleigh Park in Devon to the Montreal’s house of gluttony, Au Pied De Cochon. In these restaurants Brett’s hunger transformed into a passion. Brett returned to Toronto to own and work in the city's finest establishments for the last decade all leading up to his current position at The Bishop Strachan School where he has been given the task of feeding the leaders of tomorrow.
